To be used for producing cassava delicacies, grated cassava needs to be dewatered to contain only 40% to 45% of its original 50% to 75% moisture content. Though existing machines are available in the market for the dewatering process, the present study designed the machine to have a feature where it could be either motor-operated or manually operated. The machine was evaluated regarding its machine efficiency, loading capacity and the moisture content in wet basis (w.b.) of the produced compressed grated cassava. Results revealed that the machine has a maximum loading capacity of 1300 grams. The machine efficiency for motor operated and manually operated was found out to be 20.04% and 25.48% respectively. The average moisture content (w.b.) of the compressed grated cassava was found to be 41.42% and 43.44% for the manual and motorized operation of the machine.
